Jesenske dobrote - jabolčna pita / Apple Pie

Jesen je polna čudovitih barv in dobrot, zato bi bila groza, če tega ne izkoristimo. Sama sem se najprej lotila jabolčne pite, ki je več kot odlična, zato recept moram deliti z vami. Kasneje imam namen narediti tudi krofe iz bučk s cimetom, ampak o tem drugič. Naj vam tekne.

TESTO:
350g moke,
polovica zavitka pecilnega praška,
1 zavitek vanilijevega sladkorja,
120g sladkorja v prahu,
150g masla (lahko kokosovega - brez laktoze)
2 rumenjaka,
4 velike (ogromne) žlice kisle smetane (lahko tudi malo več) - lahko je brez laktoze

NADEV:
4 srednje velika jabolka,
80g sladkorja v prahu,
4 velike žlice drobtin,
ščepec cimeta
1 deci ruma (po želji)

POSTOPEK:
V veliki posodi zmešamo moko, pecilni prašek, vanilijev sladkor in sladkor v prahu. Dodamo narezano maslo (sobne temperature), 2 rumenjaka in kislo smetano. Zmešamo sestavine, da nastane gladko testo, sprijeto v kepo. Testo postavimo na hladno.
Olupimo in razkoščičimo jabolka, ter jih naribamo v posodo. Dodamo jim sladkor, drobtine in cimet in dobro premešamo.
Ohlajeno testo razdelimo na dva dela. Prvi del na pomokanem prostoru razvaljamo na velikost pekača, tako a ob robu testo lahko še malo zavihamo (jaz sem uporabila pekač s premerom 26 cm). Na to testo enakomerno razporedimo nadev jabolk.

Drugo polovico testa bomo uporabili za prekrivanje jabolk z mrežastim vzorcem. Odrtgamo delček testa in ga na moki razvaljamo v dolgo kačo. Ko je "kača" dovolj velika (velikost najširšega dela pekača), jo potiskamo, da postane ploščata. Takšno položimo na nadev iz jabolk. Ta postopek ponavljamo dokler nimamo prekritega pekača v razmaku med testom približno 1,5 cm, potem pa postopek ponovimo še iz druge strani pekača in testo med sabo prepletemo. Mrežo iz testa lahko premažemo z jajcem za lepšo barvo pite.

Pekač damo v pečico za 40 minut na 160°C oz. dokler skorjica ni zlato zapečena.

DOUGH: 
350g flour
half a package of a baking powder
1 package of vanilla sugar
120g powdered sugar
150g butter (coconut - lactose free)
2 yolks
4 big spoons (huge) of sour cream (can be lactose free)

FILLING:
4 medium size apples
80g powdered sugar
4 tablespoons of breadcrumbs
pinch of cinnamon
a bit of rum (if you like it)

 STEPS:

Step 1: Take a large bowl and mix together flour, baking powder, vanilla sugar and sugar. Cut the butter (room temperature) into small pieces and put it into a bowl with other ingredients. Add yolks and sour cream. Now mix together all the ingredients so you get a sticky dough in a shape of a ball. Put the dough somewhere cold for a few minutes.

Step 2: In the meantime peal and stone all the apples and grate them into another bowl. Add sugar, breadcrumbs, cinnamon and rum and mix it all together.

Step 3: Get the dough and cut it in half. Roll out the first half of dough on some flower so it fits in a baking tray (I used a 26cm baking tray). Put it in the baking tray and make sure it fits.

Step 4: Put the mixture of apples and sugar in the baking tray. Make sure every inch of the tray is covered equally.

Step 5: With the other half of dough we're going to make a net pattern. We take a small peace of dough and roll it with hands so we get some kind of a long snake. When this "snake" is long enough (it has to cover the baking tray - 26cm) we push it down with one finger, so it becomes flat. We put that on the mixture of apples. Than we take the next, smaller peace of dough and repeat the process ,until the tray is covered with dough. There must be approximately 1.5cm space between two "flat snakes".

Step 5: When one side of the tray is covered, we repeat the process on the other side of the tray, so we get some kind of a net pattern. When we are done with the net, we can cover it with egg so it gets more of a golden colour when baked.

Step 6: Put the tray into an oven for 40 minutes on 160°C or until the pie gets golden brown.
